What you’ll need

  • 1½ cups crushed graham crackers or plain sweet biscuits
  • 4 tbsp melted butter
  • 24 oz / 680 g cream cheese, room temperature
  • ¾ cup sugar
  • ½ cup sour cream
  • 1 tsp vanilla
  • 3 large eggs

Contains: Milk, egg, wheat.

Let’s make it

  1. Heat oven to 325°F / 165°C. Grease a 9-inch springform pan.
  2. Mix crumbs and butter; press into the base. Bake 10 minutes, then cool briefly.
  3. Beat cream cheese and sugar smooth. Add sour cream and vanilla. Mix in eggs one at a time on low speed, just until blended.
  4. Pour over the crust. Place pan on a baking sheet and bake 50–65 minutes, until the edges are set and the center slightly wobbles rather than sloshes.
  5. Turn the oven off, prop the door slightly open and let cool 1 hour. Cool on a rack for another hour, then refrigerate at least 4 hours.
  6. Run a thin knife around the edge before releasing the pan. Keep refrigerated.
